PB - BANANA - OATMEAL MUFFINS

I am NOT a baker. And I don’t have much of a sweet tooth. But I went in search of an easy healthy muffin recipe that I could feed my baby and me when I have that 2 o’clock craving. These are delicious, no-sugar added, and take less than 10 mins to put together.

Ingredients:
- 2 cups dry large flake/quick cook oats
- 2 medium ripe banana
- 1/2 cup natural PB
- 2 flax eggs*
- 2 Tbsp avocado oil
- 1/4 cup hemp hearts
- 1 cup milk of your choosing
- 1 tsp cinnamon
- 2 tsp baking powder
- 1 tsp baking soda
- Splash of vanilla
Directions:
- Blend all ingredients in a blender until smooth.
- Grease a muffin pan (I use coconut oil, use whatever oil you have on hand).
- Bake for 20 mins at 400F (or 15 mins for mini-muffins).
- *Flax eggs (per “egg”, double for this recipe): Whisk 1 tbsp of ground flax seed with 2.5-3 tbsp of water and let sit for 5 mins until it thickens. Can be used to replace an egg as a binder in most recipes

Every Sunday, I take time to prep our lunches for the upcoming week. I find it a massive pain in the ass every single week. I find it challenging to think of new ideas for meals I want to eat for an entire week, that keep well, and are tasty and delicious. But if I don’t meal prep, I regret it for the entire week. So (almost) no matter what, I get it done. This is one of my favourite meal prep recipes. It’s quick and easy, keeps well all week long and provides tons of fiber. My favourite kind of recipe!
